healthy eating: summer recipes

welcome summer! this is my first week of summer vacation and i’ve been trying to start it off right by eating healthy. i went grocery shopping and the only totally unhealthy thing i got was some macaroons! crazy right?!? haha anyways here are some of my favorite recipes/snacks that are healthy and delicious.

for breakfast:

i got this super good juice from trader joe’s the other day. it was so good i forgot to take a photo of it before i drank it, haha. i have an obsession with trader joe’s now and it’s kinda crazy. i got way to much there but whatever it is so worth it.

another thing i’ve been loving for breakfast is fresh fruit. i picked up a pineapple at target and have been munching on that throughout the day, not just breakfast. plus it’s super cute and totally instagrammable for your summer feed, haha.

for lunch:


i made a summer salad similar to this one. it’s so good and very pretty. i used spinach, baby kale, strawberries, raspberries, blueberries, blackberries, avocado, honey chèvre goat cheese, raw slivered almonds, a raspberry vinaigrette dressing, and some honey drizzled on top. I LOVE IT!

for dinner:


i made these amazing slow cooker honey chipotle chicken tacos! the sweetness the honey gives it makes it especially summery. i’m gonna be making these all the time!
